George & Meredith Eaton, Owners-Vineyard Managers & Winemakers
The journey that led to Firelight Vineyards began with George’s early exposure to fine wines while working as a bartender at Outback Steakhouse in 1995. He met Meredith in 1997 when she started working there as a waitress. The couple married in 1999 and expanded their family when they had Macy in 2003 and then Katie in 2005. George became very interested in making his own batch of wine sometime around 2008 and when he pitched the idea to Meredith she responded with “I thought only people in France make wine, not Texas!”… and boy was she wrong!
The couple purchased a wine making kit from a little place in Carrollton and it wasn’t long before they fell completely in love with this exciting endeavor. They continued to build their hobby as their little family grew. They learned to finish, blend, stabilize and even started to crush fruit they harvested from hobby grape growers in the area. During these years George continued to research growing grapes, and they realized quickly that it would be best to get a formal education due to the cost and complexity of grape growing. This was a very exiting time as the couple seriously contemplated starting a small commercial winery.
Since George’s career was in full swing with the railroad and their youngest was off to Kindergarten, Meredith decided to take the reins and enroll in the viticulture & enology program at Grayson College. She graduated in 2014.
By this time Meredith & George had a big dream and virtually no extra money to make it happen so they decided to try crowdfunding. They launched a campaign using Kickstarter in 2014. Although they did not reach their financial goal through this platform, nothing could stop this dream from becoming a reality. Firelight Vineyards opened their doors on the historic square of Valley View, Texas in June 2015 and proudly celebrated an incredible milestone of 10 years in business in June 2025.
What began as a husband-and-wife venture has grown into a true family business, with both of their daughters now playing an active role in the day-to-day operations. Rooted in community and family values, Firelight Vineyards continues to support local growth and connection. As they look ahead to the next decade, Firelight Vineyards is embarking on an exciting new phase of expansion, welcoming opportunities for collaboration and investment in their future.

Macy Eaton, WSET* Level 1 Certification, Specialist of Texas Wine, Wine Concierge, Special Event Planner & Wine Club Manager
Macy’s journey into the world of wine began in 2008, though she didn’t know it at the time. At just five years old, she and her sister Katie could often be found “helping” the family by splashing around in B-Brite water to clean old wine bottles. Over the years, her eager and energetic spirit became a familiar presence in the vineyard, cellar, and at special events.
When Firelight Vineyards opened its tasting room in 2015, Macy was a fixture by the register, excited to ring up non-alcohol sales for supportive friends and family who would go out of their way to buy chocolate bars or t-shirts just for her. At age 14, Macy officially joined the team—after writing a resume, completing a formal application, and sitting for a real interview (conducted by her mom).
“In the early years of our business, Macy would read the labor law posters on the office wall when she was bored. She knew she could legally start working at 14, and she couldn’t wait!”
Since then, Macy has earned her WSET Level 1 certification and, most recently, the Specialist of Texas Wine Certification in 2025. Today, she plays a key role in managing the tasting room, training new team members, coordinating special events, and overseeing Firelight’s growing Wine Club.
Beyond her responsibilities at Firelight, Macy is actively involved in the Texas wine industry. She volunteers with the Texas Wine & Grape Growers Association (TWGGA), contributing at their annual conference and trade show, and regularly attends professional development classes through the North Texas Winery Association.
While she deeply values the family business, Macy’s passion for the wine industry runs even deeper. She aspires to become a certified sommelier and plans to pursue formal education in viticulture and enology.

Katie Eaton, Wine Concierge, Culinary Assistant, Wine Festival & Hospitality Associate
Katie’s involvement in the family business began early—at just three years old, she could barely see over the top of a picking bucket during harvest. By the age of seven, she and her sister Macy helped plant the very first vine in Block One of the family estate vineyard.
In 2017, following in her sister’s footsteps, Katie formally joined Firelight Vineyards by submitting a resume, completing an application, and interviewing for her first official role. She started as a culinary assistant in the bistro kitchen, where her creativity quickly shone through. Several of her original gourmet creations still remain on the menu today.
Katie’s interest in wine began early as well. As a child, she practiced the pronunciation of complex grape varietals, famously winning a family contest by correctly saying Gewürztraminer (guh-VERTZ-trah-mee-ner) at just five years old.
As of 2025, Katie continues to support vineyard operations and serves as a Wine Concierge, representing Firelight Vineyards at festivals throughout the DFW area on select weekends. In addition to her work in the wine industry, Katie is a full-time student at the University of Oklahoma, where she is pursuing a degree in Music Education.
While music remains her greatest passion, Katie also has a strong love for plants and biology—an interest likely inspired by her upbringing among the vines.
